Responsibilities:
In this role, you will be responsible for preparing items for your designated work station in accordance with par sheets or instructions from the Kitchen Supervisor and/or Sous Chef. Your duties will include cooking and ensuring the proper “doneness” and seasoning of menu items and daily specials, while maintaining consistency and order on the cooking line. You will be tasked with preparing assigned products during service, creating cold dishes as per the club’s standard recipes, and overseeing the inventory of dressings and vinaigrettes required for both á la carte and banquet departments.

Key Responsibilities:
– Prepare meats, seafood, vegetables, and other items necessary for line service and special functions as assigned.
– Follow the club’s standard recipes meticulously when preparing all food items.
– Assemble all tools and utensils required to complete your job efficiently.
– Prepare or assist in preparing meals for employees.
– Support the preparation of food products in other areas of the kitchen as directed by your immediate supervisor.
– Operate food preparation equipment according to the manufacturer’s guidelines.
– Return unused food items to the appropriate storage areas.
– Slice and pre-portion cold cooked meats, fish, and poultry, garnishing them in an appealing manner.
– Create appetizers, hors d’oeuvres, centerpieces, and relishes in a visually attractive style.
– Prepare cold sauces, jellies, stuffing, salad dressings, and sandwiches according to club’s standard recipes.
– Request necessary food supplies to ensure menu items can be produced.
– Comply with state and local health and safety regulations while maintaining the highest sanitary standards.
– Notify the Kitchen Supervisor and/or Sous Chef of anticipated shortages in advance.
– Employ safe and sanitary food handling procedures, especially concerning personal hygiene.
– Maintain cleanliness of your work station and equipment.

– Return soiled food preparation utensils and small wares to their designated areas.

– Perform additional tasks as assigned by your supervisor.

Qualifications:
To be successful in this position, you should possess the following skills and qualifications:
– Basic knife skills
– Food Handler certification preferred
– Ability to stand for extended periods (up to 8 hours or more)
– Capability to stoop, bend, and lift up to 40 pounds occasionally
– Familiarity with safe handling procedures for potentially hazardous chemicals and equipment
