Job Summary:
The Kitchen Manager is responsible for overseeing all back-of-house operations within the restaurant, including the management of the kitchen staff. Key responsibilities include hiring personnel, procuring food supplies, and ensuring comprehensive training on proper food preparation and kitchen safety protocols. The Kitchen Manager plays a critical role in upholding organizational standards, ensuring the food is visually appealing, cooked to perfection, served in appropriate portions, and delivered promptly.

Responsibilities:
– Direct the kitchen staff, ensuring the effective execution of all employee responsibilities.
– Monitor kitchen operations to ensure compliance with health and fire department regulations.
– Maintain adherence to state, federal, and local food handling requirements and standards.
– Assist in implementing and managing kitchen and restaurant policies and procedures during scheduled shifts.
– Step in to fulfill the duties of a line cook when necessary and demonstrate the capacity to perform tasks across all kitchen roles.
– Ensure that products are stored at the correct temperatures and that recipe books reflect current menu items, portion sizes, and ingredients.
– Utilize daily prep sheets and yield sheets for meat and fish, accurately recording product counts each day and participating in the monthly inventory process.
– Proactively identify, anticipate, and address any issues related to inventory, systems, or staffing.
