Job Summary:
The Kitchen Manager oversees all aspects of back-of-house operations and the kitchen area within the restaurant. Responsibilities include hiring staff, procuring food and supplies, and ensuring proper training in food preparation and kitchen safety protocols. Additionally, the Kitchen Manager upholds the company’s standards by ensuring that all food is visually appealing, cooked to perfection, properly portioned, and served in a timely manner.

Responsibilities:
– Provide direction and oversight to kitchen staff, ensuring the execution of all employee duties.
– Monitor kitchen operations for compliance with health and fire department regulations.
– Ensure adherence to state, federal, and local food handling regulations and standards.
– Assist in the implementation and management of kitchen and restaurant policies and procedures throughout scheduled shifts.
– Perform line cook duties as needed and possess the capability to fulfill responsibilities across all kitchen positions.
– Ensure that products are stored at appropriate temperatures and that recipe books are current with menu items, portions, and ingredients.
– Utilize daily prep sheets and meat/fish yield sheets, ensuring product counts are recorded accurately, and participate in the monthly inventory process.
– Anticipate, identify, and resolve any issues related to inventory, systems, or staffing.
– Monitor labor costs to achieve budgeted goals in alignment with restaurant policies and procedures.
– Supervise and endorse the training and development of kitchen staff.
– Participate in the recruitment process by conducting interviews and recommending hiring decisions.
– Assist in completing 30-day and annual performance reviews for all back-of-house employees.
