The Kitchen Manager plays a pivotal role in overseeing all back-of-house operations and kitchen activities within the restaurant. Key responsibilities include staffing, purchasing, and inventory management, as well as training team members on proper food preparation and kitchen safety protocols. The Kitchen Manager is also tasked with maintaining the company’s high standards by ensuring that all food is presented attractively, cooked to perfection, served efficiently, and adheres to proper portion control.

Key Responsibilities:
– Provide clear direction to kitchen personnel, ensuring effective performance of all designated duties.
– Oversee kitchen operations to guarantee compliance with health and fire department regulations.
– Ensure strict adherence to state, federal, and local food handling laws and standards.
– Assist in implementing and managing kitchen and restaurant policies and procedures during scheduled shifts.
– Step in to fulfill line cook responsibilities when necessary, demonstrating proficiency in all kitchen roles.
– Ensure that food products are stored at appropriate temperatures and that recipe books are current with menu items, portion sizes, and ingredients.
– Ensure the daily utilization of prep sheets and meat/fish yield sheets, and accurately document product counts. Participate in the monthly inventory process.
– Anticipate, identify, and resolve any issues related to inventory, operational systems, and staffing.
– Monitor labor costs to achieve budgetary goals, ensuring adherence to restaurant policies and procedures.
– Oversee and approve the training and development of kitchen staff.
– Participate in the recruitment process by conducting interviews and providing hiring recommendations.
– Assist in completing 30-day and annual performance reviews for back-of-house employees.
