Job description:
Job Summary: The Line Cook is responsible for the preparation and cooking of all menu items in accordance with Food & Beverage department recipes and standards. This role requires maintaining a neat, clean, and safe work environment while ensuring the kitchen is adequately stocked.

Primary Duties & Responsibilities:
– Uphold a positive and professional demeanor with team members and guests.
– Stay informed on all current and upcoming promotions and events at Odawa Casino Resort.
– Utilize the production guide and adhere to daily inventory and ordering procedures.
– Store food items in designated areas, applying knowledge of temperature requirements and spoilage prevention.
– Execute proper receiving, thawing, storage, proportioning, sanitation, heating, holding, and reheating processes for various food products, including sauces, soups, salad bar items, and produce.
– Maintain high standards for raw product quality and food production; effectively identify all raw products by appearance.
– Transform raw ingredients into quality finished dishes according to predetermined standards for food preparation.
– Demonstrate proficiency in using dry and liquid measures as well as scales.
– Refer to kitchen manuals and recipe files to ensure correct preparation methods.
– Measure and weigh ingredients as required.
– Prepare an adequate quantity of food to ensure efficient line operation, following proper storage and dating procedures.
– Clean, peel, cut, and seed vegetables and fruits; prepare meats, poultry, and seafood through cutting and grinding techniques.
– Create soups, sauces, salad dressings, cold sauces, dips, and garnishments.
– Prepare food through various cooking methods including frying, sautéing, broiling, roasting, braising, poaching, steaming, baking, stir-frying, simmering, and boiling.
– Set up, maintain, and break down cooking stations as required.
– Adhere to all sanitation standards, including uniform dress codes, food preparation, and storage requirements.
– Transport pans, kettles, and trays of food between workstations, stove, and refrigerator. Assist with dishwashing and pot/pan cleaning in the absence of stewards.
– Maintain cleanliness in work areas, equipment, and utensils; manage waste disposal, sweeping, mopping, and cleaning garbage containers.

Minimum Qualifications:
– A minimum of one (1) year of experience in the service industry.
