At Great Wolf, the Restaurant Executive Chef is entrusted with the comprehensive management of kitchen operations. This role includes the creation and revision of menus aimed at maximizing profits while minimizing losses, as well as the testing and development of new recipes. The Executive Chef will monitor customer satisfaction, oversee inventory management for kitchen supplies and food, and ensure compliance with all governmental regulations regarding food safety and facility standards.

Essential Duties & Responsibilities:
- Oversee and direct the preparation and presentation of all food across the Lodge’s various venues.
- Adhere to and implement all local Health Department food preparation regulations and codes.
- Ensure all kitchen staff possess required food preparation licenses and complete necessary training.
- Recruit, train, supervise, and manage schedules for chefs, cooks, and other team members, maintaining high standards of food preparation, merchandise presentation, and productivity.
- Engage effectively with guests to promote food offerings and guide staff activities.
- Analyze feedback from guests and employees, implementing changes to enhance satisfaction.
- Foster a collaborative working relationship with all hotel staff to optimize operations and guest service.
- Monitor staff performance, quality of products, and production flow, implementing improvements as necessary.
- Develop and introduce innovative menu options that align with current food trends and regional preferences while achieving revenue and profitability targets.
- Collaborate with the Director of Food and Beverage on new menu selections and alterations.
- Conduct audits of food storage practices, ensuring product quality and compliance with health codes.
- Maintain control and tracking of high-value items (e.g., meats like steaks and bacon).
- Develop, implement, and oversee safety programs to ensure a compliant and secure working environment, addressing Food Safety, Ergonomics, Emergency Response, and other relevant areas.
- Assist the Food & Beverage Director with the estimation of the annual food budget and controllable expenditures.
Basic Qualifications & Skills:
- High School diploma or equivalent.
- Minimum of 5 years of experience in restaurant kitchens.
- At least 1 year of experience in a supervisory or leadership role, focusing on financial oversight, menu development, and personnel management.
- Flexibility regarding scheduling to meet business demands, including evenings, weekends, and holidays as necessary.
- Successful completion of background checks and drug screenings.
