The Chef de Cuisine is a pivotal leadership role within the culinary team at Spice Catering Co. This position entails overseeing daily back-of-house operations, managing culinary execution for off-site events, and spearheading innovation in menu development. Acting as a vital link between the kitchen staff and management, the Chef de Cuisine is responsible for ensuring excellence in food quality, efficient kitchen systems, staffing, and training, all while adhering to Spice’s core values of sustainability and thoughtful hospitality. Key Responsibilities:

Leadership and Team Development

  • Mentor, coach, and hold back-of-house staff accountable to Spice standards and core values.
  • Lead daily pre-shift meetings and assign responsibilities to ensure kitchen success.
  • Support the recruitment, onboarding, and training of kitchen personnel.
  • Oversee staff scheduling and performance management.
  • Cultivate a positive, collaborative, and professional kitchen environment.

Operational Management

  • Supervise daily kitchen operations, encompassing food preparation, event execution, and sanitation.
  • Uphold high standards of food safety, cleanliness, and organization.
  • Monitor food production for quality, consistency, and presentation.
  • Collaborate with the Executive Chef to enhance systems and standard operating procedures.
  • Manage equipment maintenance and report any necessary repairs.

Menu Development and Innovation

  • Assist in crafting seasonal, scratch-made menus that align with Spice’s mission.
  • Introduce and train the team in new techniques, trends, and recipes.
  • Contribute ideas for engaging guest experiences, such as chef activations and live cooking demonstrations.

Cost Control and Administration

  • Assist in managing inventory, procurement, and waste reduction strategies.
  • Monitor food and labor costs to meet financial objectives.
  • Support the development, costing, and documentation of recipes.
  • Ensure event preparation and packing are completed with precision and efficiency.

Cross-Department Collaboration

  • Work closely with sales, event, and warehouse teams to ensure seamless event execution.
