Job description:
Assist in all aspects of food production at the Kellogg Center, ensuring the highest quality culinary offerings for guests. Responsibilities include conceptualizing menus, developing recipes, and defining specifications to deliver premium food products. Demonstrate comprehensive knowledge of all Kellogg Center banquet event orders, production sheets, change reports, and the State Room restaurant menus. Oversee daily food operations to guarantee that banquet food production and plate presentations meet the highest standards of excellence. Contribute to the success of the Kellogg Center by leveraging forecasting data and effective scheduling techniques to adapt to fluctuations in business demands. Maintain health, sanitation, and safety standards in accordance with State and Michigan State University Health regulations. Assist in the procurement of food, kitchen supplies, and equipment, while actively participating in daily operational meetings. Responsible for interviewing, hiring, training, scheduling, and supervising both full-time and part-time team members.
All positions in Student Life and Engagement (SLE) are designated as critical status. In the event of a university closure, modification, or suspension of operations due to snow or other emergency conditions, you will be expected to make all reasonable efforts to report to work as scheduled. If you have an approved remote work agreement allowing you to work partially from home, you may still be required to work on-site to support the MSU community.
Minimum Requirements
A foundational knowledge typically acquired through two to three years of college or vocational schooling in Culinary Arts. A minimum of one to three years of progressively responsible experience in food production and supervision is required, with responsibilities equivalent to those of a Sous Chef in a full-service food and beverage operation, or an equivalent combination of education and experience.
Desired Qualifications
Experience in hotel culinary operations, along with a proven ability to work effectively with individuals from diverse racial, ethnic, socioeconomic, LGBTQIA+, and gender backgrounds.
