Job Summary:
The Chef is responsible for overseeing all operations in the back of house and kitchen area of the restaurant. Alongside the Kitchen Manager, the Chef is tasked with hiring staff, procuring food and supplies, and training team members on proper food preparation and kitchen safety protocols. Furthermore, the Chef ensures that the company’s standards are consistently met, including the visual appeal of the food, accurate cooking techniques, portion control, and timely service.

Responsibilities:
– Direct kitchen staff, ensuring the effective execution of all assigned duties.
– Monitor kitchen operations to guarantee compliance with health and fire department regulations.
– Ensure adherence to state, federal, and local food handling laws and standards.
– Assist in the implementation and management of kitchen and restaurant policies and procedures throughout the scheduled shifts.
– Perform line cook duties as needed and demonstrate competency in all kitchen positions.
– Verify that products are stored at appropriate temperatures and that recipe books are current with menu items, portions, and ingredients.
– Utilize daily prep sheets and meat/fish yield sheets, ensuring accurate product counts and participating in the monthly inventory process.
– Anticipate, identify, and resolve any issues related to inventory, systems, and staffing.
– Monitor labor costs to achieve budgetary goals in accordance with restaurant policies and procedures.
– Oversee and approve the training and development programs for kitchen staff.
– Participate in the hiring process by conducting interviews and providing hiring recommendations.
– Assist in the completion of all back-of-house employee 30-day and annual performance reviews.
