Job Summary:
The Chef is accountable for the overall operations of the back of house and kitchen area within our restaurant. The Chef and Kitchen Managers are responsible for hiring staff, procuring food and supplies, and ensuring that all team members are trained in proper food preparation and kitchen safety techniques. Additionally, the Chef upholds the standards of our organization by ensuring that meals are visually appealing, cooked to perfection, correctly portioned, and served promptly.

Responsibilities:
– Direct kitchen staff to guarantee the effective execution of all assigned duties.
– Monitor kitchen operations to ensure compliance with health and fire department regulations.
– Ensure adherence to state, federal, and local food handling requirements and standards.
– Assist in implementing and managing kitchen and restaurant policies and procedures during scheduled shifts.
– Execute line cook responsibilities as needed and possess the capability to perform all kitchen positions.
– Ensure food products are stored at appropriate temperatures, and that recipe books are updated with current menu items, portions, and ingredients.
– Utilize daily prep sheets and meat/fish yield sheets, ensuring accurate product counts and participating in the monthly inventory process.
– Proactively identify and resolve inventory, systems, and staffing issues.
– Monitor labor costs to meet budgeted goals in alignment with restaurant policies and procedures.
– Oversee and endorse the training and development of kitchen staff.
– Participate in the hiring process by conducting interviews and making staffing recommendations.
– Assist in completing all back-of-house employee 30-day and annual performance reviews.
