Job Summary:
The Chef is responsible for the efficient operation of the back of house and kitchen area within the restaurant. The Chef ensures that the company’s standards are consistently met—ensuring that the food presentation is appealing, cooking is executed properly, portion sizes are accurate, and service is prompt.
Responsibilities:
– Provide clear direction to kitchen staff, guaranteeing the effective execution of all duties.
– Monitor kitchen operations to ensure adherence to health and fire department regulations.
– Ensure compliance with state, federal, and local food handling requirements and standards.
– Assist in the implementation and management of kitchen and restaurant policies and procedures throughout scheduled shifts.
– Perform duties as a line cook as necessary and be proficient in all kitchen positions.
– Verify that products are stored at appropriate temperatures and that recipe books are current with menu items, portions, and ingredients.
– Ensure the proper use of daily prep sheets and meat/fish yield sheets, maintaining accurate product counts and participating in the monthly inventory process.
– Proactively identify and resolve any issues related to inventory, systems, and staffing.
– Monitor labor costs to align with budgeted goals following restaurant policies and procedures.
– Oversee and approve the training and development of kitchen staff.
– Engage in the hiring process by conducting interviews and providing hiring recommendations.
– Assist in completing 30-day and annual performance reviews for all back-of-house employees.
