The Chef will assume overall responsibility for delivering a high-quality dining service that accommodates resident preferences and dietary needs while ensuring compliance with relevant food safety and licensing regulations. The role entails maintaining a clean kitchen environment and adhering to safe food handling and storage practices, while providing effective leadership to all culinary staff.
Candidates should possess a degree as a Chef from a culinary institute or an equivalent certification in Restaurant/Food and Beverage management, or have significant experience in food service and sanitation. It is essential to maintain Food Protection Manager and HACCP Certification in food safety and sanitation (such as ServSafe). The ideal candidate will have a comprehensive understanding of geriatric dietary needs, menu planning, and kitchen management, alongside strong leadership and motivational skills for effective staff supervision, training, and development. Excellent culinary skills are required, with experience in catering or culinary services management preferred.
Mathematical proficiency is necessary for accurately adapting ingredient measurements in recipes. Candidates must demonstrate exceptional time management and organizational abilities to ensure seamless food preparation and timely meal service at the proper temperature. A thorough knowledge of food storage and handling guidelines to prevent contamination or spoilage is mandatory. Successful completion of state-mandated criminal background screening and random drug testing is also required.
Essential Functions include:

Menu Planning: Develop menus that consider resident preferences, dietary restrictions, and seasonal availability of ingredients, incorporating fresh fruits and vegetables. Maintain an inventory for at least three days of meal service, including emergency supplies such as bottled water. Utilize fresh herbs from the Live Herb Wall, if available, in meal preparation.

Meal Service: Ensure that meals are prepared and served punctually at the appropriate temperature. Establish and uphold standardized recipes, preparation guides, and production standards. Organize special events such as themed lunches and family functions while educating staff on proper meal service and portioning techniques. Engage with residents and guests during dining hours to enhance the dining experience.

Resident Satisfaction: Prioritize resident preferences by offering alternative selections that cater to individual tastes. Facilitate resident meetings upon move-in and periodically thereafter to understand and address their dining needs. Conduct monthly Chef Forums to gather feedback on the dining experience.
