Department: Dining Services

Summary
The incumbent will be responsible for the meticulous preparation and production coordination of all assigned hot and cold menu items, under the guidance of a supervisor.

Responsibilities

  1. Ensure adherence to daily production and serving schedules for cafeteria lines, retail operations, special luncheons, buffets, and banquets.
  2. Requisition foodstuffs and supplies from the stores clerk or retrieve them personally from storage to fulfill daily production and preparation requirements.
  3. Operate all equipment required for the preparation and production of assigned menu items, while following appropriate safety protocols.
  4. Provide guidance to departmental staff regarding portion sizes, food items, ingredients, preparation methods, presentation, garnishing, and quality control, ensuring recipes are meticulously followed to meet production demands and quality standards.
  5. Address customer inquiries and provide information as needed.
  6. Maintain a clean, sanitary, and safe working environment.
  7. Oversee the management of garbage removal and cardboard recycling within the assigned area.
  8. Conduct routine physical inventories in designated areas as directed by the supervisor.
  9. Assist in training and mentoring new employees, including both regular and student staff involved in food production, as required.
  10. Engage in necessary training to adapt to operational changes that impact assigned duties.
  11. Comply with current uniform policies.
  12. Demonstrate a commitment to continuous improvement strategies and actively participate in University initiatives aimed at enhancement.
  13. Integrate safety practices into daily activities.
  14. Provide functional supervision over student assistants and other assigned personnel.

Required Education, Certifications, Licensures

  • A high school diploma and culinary training, or an equivalent combination of education and experience that provides comparable knowledge and abilities.

Required Experience

  • A minimum of three years of experience in a commercial, institutional, restaurant, or hotel kitchen or comparable food service operation as a skilled cook or in a similar role.

Required Knowledge, Skills, and/or Abilities

  • Proven ability to perform as a skilled cook across processes such as baking, roasting, frying, grilling, braising, boiling, simmering, and stewing.
  • Comprehensive knowledge of cooking times, appropriate temperatures, weight loss, portion control, and production standards within the cook’s department.
  • Proficient in reading and interpreting recipes for all assigned menu items in terms of quantity, consistency, and composition.
  • Familiarity with the operation of food service equipment.

  • Strong capability to both give and follow instructions.
  • Ability to collaborate effectively with individuals in diverse situations across all areas of assignment.
  • Excellent interpersonal and communication skills.
  • Willingness to obtain a food safety certification within six months of employment.
  • Possession of a valid driver’s license and compliance with Michigan Tech’s vehicle use requirements.
