Summary
The role entails overseeing the preparation and production coordination of all assigned hot and cold menu items, in alignment with directives from the supervisor.
Responsibilities
- Ensure adherence to daily production and serving schedules across cafeteria lines, retail operations, special luncheons, buffets, and banquets.
- Requisition items from the stores clerk or retrieve necessary foodstuffs and supplies to maintain daily production and preparation timelines.
- Operate all relevant kitchen equipment for the preparation and production of designated menu items, following established safety protocols.
- Guide departmental colleagues on portion sizing, ingredients, preparation methods, and presentation techniques to ensure adherence to recipes and maintain quality standards.
- Provide requested information to customers promptly.
- Uphold a clean, sanitary, and safe work environment.
- Manage garbage removal and cardboard recycling within the assigned area.
- Conduct regular physical inventories in designated areas as directed by the supervisor.
- Assist in the training and onboarding of new employees, including both regular staff and students assigned to food production, as needed.
- Participate in required training to adapt to operational changes impacting assigned duties.
- Comply with current uniform policies.
- Commit to learning about and implementing continuous improvement strategies in day-to-day tasks while engaging with University initiatives.
- Incorporate safety practices into all work activities.
- Provide functional supervision to student assistants and other personnel as designated.
Required Education, Certifications, Licensures
- A high school diploma and culinary training, or an equivalent combination of education and experience that provides comparable knowledge and skills.
Required Experience
- A minimum of three years of experience in a commercial, institutional, restaurant, or hotel kitchen as a skilled cook or in an equivalent role.
Required Knowledge, Skills, and/or Abilities
- Proven ability to function competently as a skilled cook, demonstrating proficiency in baking, roasting, frying, grilling, braising, boiling, simmering, and stewing.
- Comprehensive understanding of cooking times, appropriate temperatures, weight loss, portion control, and production benchmarks.
- Ability to read and interpret recipes accurately concerning quantity, consistency, and composition of all menu items in the department.
- Familiarity with the operation of food service equipment and service standards to preserve food quality and prevent contamination.
- Strong ability to both provide and adhere to instructions.
- Capability to work effectively with diverse individuals in various situations, maintaining a harmonious work environment.
- Excellent interpersonal and communication abilities.
- Ability to obtain food safety certification within six months of employment.
- Possession of a valid driver’s license and compliance with Michigan Tech’s vehicle use requirements.

Work Environment and Physical Demands
