ProMedica Monroe Regional Hospital provides a comprehensive range of inpatient and outpatient services throughout southern Michigan and Ohio. As a national frontrunner in the treatment of heart attacks, congestive heart failure, pneumonia, and surgical care, the hospital also excels in obstetrics, emergency care, intensive care, infection control, and organ donation across Michigan.
Position Summary:
Under general supervision and in accordance with established policies and procedures, the incumbent is responsible for the preparation, cooking, and baking of food items designated for patients, employees, visitors, and others. This role ensures that food items are prepared efficiently, in adequate quantities, and maintain the hospital’s quality standards.
Accountabilities:
1. Responsible for consistently applying proper HACCP techniques while storing, handling, and holding all food items, including monitoring and documenting food temperatures as well as adhering to proper leftover procedures.
2. Reviews tally and production sheets along with special function notices to determine the correct quantity of food to prepare; accurately records post food production activities and gathers necessary food and supplies from refrigerators and storerooms.
3. Diligently follows recipes to produce high-quality food in accordance with cafeteria and menu standards, including modified diets, and places finished items in appropriate serving containers for use on the tray line or in the cafeteria.
4. Efficiently manages workload across tray lines, cafeterias, mobile meals, and special functions, completing tasks in a timely manner. Provides assistance to fellow cooks and bakers in preparing assigned items and prepares items in advance for the following day whenever time allows.
5. May assess food options to be served in the cafeteria and determine substitutions as necessary.
6. Exhibits a cost-conscious mindset during daily operations, actively contributing to cost reduction efforts by minimizing waste and overproduction, utilizing batch cooking techniques whenever feasible.
7. Promptly reports any food shortages, dated items, or items received in unsatisfactory condition.
8. Maintains a strong commitment to cleanliness of personal appearance, work environments, and kitchen equipment, adhering to infection control measures, including hand hygiene and appropriate hair coverings for both personal and public safety.
Required Qualifications:
– A high school diploma or equivalent, complemented by training in cooking, baking, and the necessary arithmetic skills for recipe adjustments.
– Six to twelve months of on-the-job training to gain familiarity with work procedures, food storage areas, departmental operations, and cooking techniques and recipes.
– Proficient in reading and interpreting menus and recipes, with the capability to cook and bake according to specific instructions, including the arithmetic skills necessary for measuring ingredients and adjusting menus to meet production requirements.
Physical Demands:
This position requires exposure to varying temperatures and noise levels, along with the physical ability to stand for prolonged periods and/or move continuously, including the capacity to lift and carry weights of up to 50 pounds.
