The Dishwasher and General Utility position is responsible for upholding cleanliness and sanitation standards for china, glassware, tableware, and cooking utensils, employing both machine and manual cleaning methods. This role also ensures that the dishwashing area is maintained as a clean, safe, and sanitary environment.

General Responsibilities:

  • Sort and rinse dirty dishes, glassware, tableware, and other cooking utensils, placing them in racks for the dishwashing machine.
  • Sort and stack clean dishes, transporting them to the cook’s line and appropriate storage areas, ensuring any soiled dishes are rewashed before delivery.
  • Change the dishwater in the dish machine every hour.
  • Hand-wash pots, pans, and trays.
  • Dispose of trash and garbage in the dumpster.
  • Set up or break down the dishwashing area as needed.
  • Clean and roll/unroll mats.
  • Fill and empty soak tubs with cleaning and sanitizing solutions.
  • Sweep and mop floors.
  • Assemble and disassemble the dishwashing machine.
  • Clear debris around the restaurant exterior and garbage dumpster.
  • Perform general cleaning tasks in the restaurant and restrooms as directed.
  • Clean up any spills to maintain dry kitchen floors.
  • Notify management if the dish machine’s wash or rinse cycles fall below safety-standard temperatures.
  • Ensure proper hygiene measures by washing hands before handling clean dishes after touching dirty ones.
