Job description:

6PM Hospitality Partners LLC is seeking a dynamic and passionate Executive Chef to lead the culinary operations at our esteemed establishment. This is an exciting opportunity for a culinary professional with a proven track record in creating exceptional dining experiences and managing high-performing kitchen teams.

The Executive Chef is responsible for the overall culinary operations of the hotel. This role encompasses oversight of all food and beverage activities in the kitchen, team training and development, menu planning, product purchasing, and management of the culinary budget. The Executive Chef will uphold the highest professional standards for food quality and sanitation, in accordance with 6PM Hospitality Partners, Hilton standards, and local health department regulations. You will play a pivotal role in advancing our culinary vision while ensuring cost efficiency and cultivating a positive team culture.

Essential Functions:

Menu Planning

  • Craft and update menus to cater to the preferences and dietary requirements of our guests.
  • Introduce innovative dishes while maintaining a balance with classic and popular options.

Kitchen Management

  • Oversee all facets of the kitchen, including food preparation, cooking, and presentation.
  • Ensure a seamless workflow, efficient resource utilization, and timely delivery of high-quality dishes.
  • Manage inventory, ordering, and stock control to minimize waste and maintain cost efficiency.
  • Maintain a comprehensive understanding of all stations within each hotel food and beverage outlet.

Staff Leadership and Development

  • Recruit, train, and supervise kitchen staff in alignment with the standards of 6PM Hospitality Partners and Hilton.
  • Foster a positive and collaborative work environment.
  • Provide ongoing training and professional development opportunities for kitchen staff.
  • Lead, manage, and ensure team accountability to the employment standards and performance expectations set by the core values of 6PM Hospitality Partners and Hilton. Implement disciplinary measures as necessary, adhering to 6PM Hospitality Partners policies.
  • Ensure all back-of-house shifts are adequately covered, including weekends, holidays, and vacations, promoting fairness among all team members.

  • Conduct monthly inventories and manage pricing, cost controls, requisitioning, and issuance for food production.

Food Safety and Sanitation

  • Ensure compliance with all health and safety regulations.
  • Implement and maintain proper food handling, storage, and sanitation practices.
  • Conduct inspections of kitchens to ensure cleanliness, sanitation, and organization throughout all areas, including coolers and storage.
  • Maintain equipment in optimal condition, implementing a regular cleaning and maintenance schedule for all kitchen areas and equipment.

Collaboration with Other Departments

  • Coordinate with other departments, such as Banquet & Catering, to meet guest needs and expectations.
  • Attend Banquet Event Order (BEO) and food and beverage staff meetings.
  • Collaborate with the Food & Beverage team to promote culinary offerings and special events.

Innovation and Trends

  • Stay abreast of culinary trends, new ingredients, and innovative cooking techniques.
  • Introduce new concepts and ideas to ensure our culinary offerings remain competitive.

Other Functions

  • Report to work in professional chef attire, ensuring a neat and clean presentation.
