The Restaurant Executive Chef at Great Wolf is responsible for overseeing all kitchen operations, which include creating and revising menus to optimize profitability while minimizing waste, developing and testing recipes, ensuring customer satisfaction, managing inventory of kitchen supplies and food, and adhering to all relevant governmental regulations regarding food safety and hygiene.

Essential Duties & Responsibilities:

  • Lead and manage the preparation and presentation of all food across the Lodge’s venues.
  • Ensure compliance with local Health Department food preparation codes and regulations.
  • Maintain necessary food preparation licenses and training among all kitchen staff.
  • Hire, train, supervise, and schedule chefs, cooks, and other kitchen team members while ensuring adherence to merchandising, productivity standards, cost controls, and demand forecasts.
  • Actively listen and communicate effectively with guests to promote food offerings and guide staff activities.
  • Analyze feedback from guests and team members to identify areas for improvement and implement necessary changes.
  • Build collaborative relationships with hotel staff to ensure smooth operational workflows and exceptional guest service.
  • Monitor team performance, assess product quality, and manage production processes, promoting continuous improvement.
  • Design and execute new menu options and individual dishes in response to current culinary trends and demographic preferences, aligned with profitability targets.
  • Create innovative menu selections tailored for special events and banquets, taking into account client budgets and expectations.
  • Collaborate with the Director of Food and Beverage to discuss new offerings and modifications.
  • Conduct audits of food inventory and storage practices to ensure quality control, utilizing FIFO (first in, first out) principles and compliance with health regulations.
  • Manage and track high-value items to maintain cost integrity.
  • Develop, implement, and oversee programs that ensure a safe workplace environment compliant with Food Safety, Ergonomics, Emergency Response, Injury and Illness Prevention, and Hazard Communication standards.
  • Assist the Food & Beverage Director in estimating the annual food budget and managing controllable expenses.

Basic Qualifications & Skills:

  • High School diploma or equivalent.
  • Minimum of 5 years of experience in restaurant kitchens.
  • At least 1 year of supervisory or leadership experience in a restaurant setting, with responsibilities including financial oversight and menu development.
  • Flexibility in scheduling to accommodate business needs, including evenings, weekends, and holidays.
  • Successful completion of criminal background check and drug screening.
