At Great Wolf, the Restaurant Executive Chef oversees all kitchen operations. This role includes creating and updating menus to optimize profitability, testing and developing recipes, monitoring customer satisfaction, managing inventory of kitchen supplies and food, and ensuring compliance with all governmental regulations regarding food and facilities.

Essential Duties & Responsibilities:

  • Oversee and direct the preparation and presentation of all food across the Lodge’s various dining venues.
  • Maintain strict adherence to local Health Department food preparation codes and regulations.
  • Ensure all food preparation licenses and required training are consistently maintained by all kitchen staff.
  • Hire, train, supervise, and schedule chefs, cooks, and support staff engaged in food preparation, ensuring compliance with merchandising and productivity standards, as well as cost controls and forecasting needs.
  • Actively listen and communicate effectively while engaging with guests to promote menu offerings and guide staff in their activities.
  • Analyze guest and team feedback, making informed decisions and taking action to implement enhancements.
  • Foster strong working relationships with all hotel staff to ensure efficient operations and a high level of service to guests.
  • Monitor staff performance and food quality, implementing improvements where necessary.
  • Develop and implement innovative menus and specific menu items in alignment with current culinary trends, regional demographics, and profitability targets.
  • Create unique menu offerings for special events and banquets, while respecting client budgets and expectations.
  • Collaborate with the Director of Food and Beverage on new selections and menu adjustments.
  • Conduct audits of food storeroom items and storage practices, utilizing FIFO (first in, first out) methods, ensuring compliance with health code standards.
  • Maintain oversight and tracking of high-value food items (such as proteins).
  • Develop, implement, and monitor safety programs to ensure compliance with regulations related to Food Safety, Ergonomics, Emergency Response, Injury and Illness Prevention, and Hazard Communications.
  • Assist the Food & Beverage Director in estimating the annual food budget and managing controllable expenditures.

Basic Qualifications & Skills:

  • High School diploma or equivalent.
  • A minimum of 5 years of experience in restaurant kitchens.
  • At least 1 year of experience in a supervisory or leadership role responsible for financial management, menu development, and personnel matters.
  • Flexibility in scheduling based on business demands, including nights, weekends, and holidays.
  • Successful completion of a criminal background check and drug screening.
