Job Summary: The F&B Line Cook is responsible for the preparation and cooking of all menu items in accordance with the Food & Beverage department’s recipes and standards. This role emphasizes maintaining a neat, clean, and safe work environment while ensuring that kitchen supplies are adequately stocked.
Primary Duties & Responsibilities:
– Foster a positive and professional demeanor when interacting with team members and guests.
– Stay informed about current and upcoming promotions and events at Odawa Casino Resort.
– Follow production guides and adhere to daily inventory and ordering procedures.
– Store food items in designated areas, utilizing knowledge of temperature requirements and food safety to prevent spoilage.
– Execute proper techniques for receiving, thawing, storing, portioning, and reheating foods, including sauces, soups, and salads.
– Ensure adherence to quality standards for raw ingredients; readily identify all raw products by sight.
– Transform raw products into high-quality finished dishes according to established food preparation standards.
– Demonstrate accurate use of dry and liquid measuring tools and scales.
– Utilize kitchen manuals and recipe files effectively.
– Measure and weigh ingredients accurately.
– Prepare sufficient quantities of food to operate the line efficiently while adhering to proper storage and dating protocols.
– Wash, peel, cut, and seed vegetables and fruits; clean, cut, and grind meats, poultry, and seafood.
– Prepare a variety of food items, including soups, sauces, salad dressings, and garnishments.
– Employ various cooking methods, such as frying, sautéing, broiling, roasting, and steaming.
– Set up, maintain, and dismantle cook stations as needed.
– Uphold hygiene standards regarding sanitation, uniforms, food preparation, and storage.
– Responsible for transporting pans, kettles, and trays of food to and from workstations, stoves, and refrigeration units.
– Assist with dish duty and cleaning pots and pans in the absence of a steward.
– Clean work areas, equipment, and utensils; manage waste disposal; sweep and mop work areas; and steam-clean or hose garbage containers.
– Attend all required meetings and complete necessary training satisfactorily.
– Maintain strict confidentiality at all times.

Minimum Qualifications:
– At least one (1) year of experience in the service industry.
– Basic math skills are required.
– Must be fluent in reading, writing, and speaking English.

– Knowledge of food rotation principles (First In First Out—FIFO).
– Familiarity with compound dressings, sauces, and salads.
