Job Duties and Responsibilities:

  • Oversee budgeted revenues and expenses, enhancing profitability within the Food & Beverage Department.
  • Monitor budgets across all areas of cost control, maintaining a consistent focus on inventory costs, sales, and payroll.
  • Elevate guest satisfaction by delivering exceptional products and services.
  • Understand and implement all brand directives for strategic partnerships.
  • Comply with brand-mandated menus and programs.
  • Direct daily staff activities and assignments, ensuring appropriate coverage; develop and communicate departmental strategies and goals; and prioritize tasks.
  • Provide oversight to the Executive Chef, ensuring optimal quality and presentation of all food served to guests.
  • Oversee the property-wide banquet and catering options.
  • Collaborate with the Sales Department to review all Food & Beverage minimums and selling guidelines.
  • Work closely with the Director of Sales on sales and marketing strategies.
  • Ensure adherence to all brand standards related to Food and Beverage.
  • Lead all aspects of banquet operations, maintaining managerial and captain oversight.
  • Review and approve all menus and pricing for restaurant outlets and banquet/catering services.
  • Evaluate food products, front-of-house employee performance, and product development in alignment with market position.
  • Develop selection and pricing strategies for liquors and wines, overseeing their procurement.
  • Ensure ongoing maintenance of physical assets through necessary capital planning within the budget process.
  • Comply with all health and safety regulations.
  • Conduct interviews, hire and train employees; plan, assign, and direct work; assess performance; provide rewards and coaching; address complaints; and resolve issues.

Education and Experience:

  • Minimum of a high school diploma; post-secondary education is preferred.
  • A Bachelor’s Degree in Hospitality/Restaurant Management or equivalent experience is preferred.
  • A minimum of three years’ experience as a Restaurant General Manager or Director of Food & Beverage.
  • Food Handler and Alcohol Awareness Certifications (if applicable).

Knowledge, Skills, and Abilities:

  • Comprehensive understanding of alcohol serving practices and standards.
  • Knowledge of federal and state labor laws as well as local health and sanitation regulations.
  • Experience in recruiting, interviewing, and hiring restaurant, bar, and culinary talent.
  • Proven experience managing restaurants and bars at the Assistant General Manager level or higher.
  • A profound passion for and understanding of the restaurant and bar industry, demonstrated by a track record of success.
