Job Summary:
The kitchen manager holds a pivotal role in overseeing the overall operations of the back-of-house and kitchen area within our restaurant. The responsibilities include hiring staff, managing food purchases and inventory, and ensuring all team members are trained in proper food preparation and kitchen safety protocols. Additionally, the kitchen manager is responsible for upholding company standards, ensuring that food presentation is appealing, cooked to perfection, and served in appropriate portion sizes and timely manner.
Responsibilities:
– Provide clear direction to kitchen staff, ensuring the effective execution of their assigned duties.
– Monitor kitchen operations to guarantee compliance with health and fire department regulations.
– Ensure adherence to state, federal, and local food handling requirements and standards.
– Assist in implementing and managing kitchen and restaurant policies and procedures throughout scheduled shifts.
– Serve as a line cook when necessary, demonstrating versatility by performing the duties of all kitchen positions.
– Verify proper food storage temperatures and maintain updated recipe books with current menu items, portions, and ingredients.
– Utilize daily prep sheets and meat/fish yield sheets effectively, ensuring accurate product counts and participation in the monthly inventory process.
– Proactively identify and resolve issues related to inventory, systems, and staffing.
– Monitor labor costs to achieve budgeted goals in accordance with restaurant policies and procedures.
– Oversee and approve the training and development of kitchen staff.
