Responsibilities:

You will prepare necessary items for your workstation following par sheets or instructions from the Kitchen Supervisor or Sous Chef. It is essential to ensure the proper cooking and seasoning of all items from your designated station as they appear on the menu and daily specials, while maintaining consistency and order on the cooking line. You will be responsible for preparing products assigned to your station during service and cold products according to established standard recipes. Additionally, you will oversee the inventory ofdressings and vinaigrettes required by both the á la carte and banquet departments.

Key Responsibilities include:

Food Preparation & Cooking
– Assist in the preparation, cooking, and plating of menu items according to club standards.
– Adhere to recipes, portion controls, and plating guidelines to maintain consistency and quality.
– Operate and maintain kitchen equipment such as grills, fryers, ovens, and sauté stations.
– Acquire a thorough understanding of ingredients and their proper handling, storage, and use.
– Learn and apply various cooking methods including grilling, roasting, sautéing, and frying.
– Assist with butchery, sauce preparation, and other essential kitchen techniques.

Knife Skills & Ingredient Handling
– Develop foundational knife skills, including chopping, dicing, julienning, and mincing.
– Practice safe and efficient knife handling techniques to ensure accuracy and safety.
– Label, date, and store ingredients appropriately to maintain freshness and minimize waste.

Kitchen Organization, Safety & Sanitation
– Maintain a clean and organized workstation while adhering to all safety and sanitation guidelines.
– Safely handle potentially hazardous equipment and cleaning chemicals in accordance with established procedures.
