Job description:
The Line Cook, under the supervision of the Lead Cook, Restaurant Manager, or Food and Beverage Manager, is tasked with the timely preparation and cooking of all food products, which include soups, sauces, hot entrees, pastas, and vegetables, in quantities that align with business volume. This role also involves assisting in the preparation and cooking for banquets, employee meals, and other special events, as well as maintaining the quality and attractiveness of the buffet offerings.
Essential Functions:
- Ensure consistent and appealing presentation of food items through effective portion control, fresh garnishes, and strict adherence to established recipe standards.
- Collaborate with the Lead Cook or Food and Beverage Manager to discuss the daily preparation list and the necessary tasks for the day and subsequent day.
- Clean and restock the workstation in preparation for the following shift.
- Prepare various food items, including cocktail sauce, tartar sauce, horseradish sauce, and the cutting of lemons.
- Monitor food temperatures hourly and document this information at the end of the shift.
- Communicate effectively with fellow cooks regarding low food product levels on the buffet.
- Cook, fill, and refill food items while maintaining a neat and clean buffet area.
- Carve a selection of roasted meats each evening for the buffet.
- Maintain a clean and appetizing buffet while ensuring that all food is fresh.
- Monitor food temperatures and promptly notify management of any issues.
- Uphold safety, security, and hospitality standards.
- Check all backup food products for those already in use on the buffet.
- Assess temperatures and water content levels of all food holding equipment in operation.
- Regularly update the Lead Cook, Restaurant Manager, or Food and Beverage Manager on the progress of assigned prep work.
- Efficiently date, label, and store all products in a sanitary manner.
- Maintain a high level of cleanliness and sanitation of equipment and workstation throughout the shift.
Additional Responsibilities:
- Observe safe food handling practices while adhering to recipe standards.
- Operate the point of sale (POS) system as needed.
- Rotate food products in walk-in refrigeration and workstation areas.
- Attend all mandatory training sessions and meetings.
- Perform other job-related duties as assigned.

Physical Requirements:

Requirements:
