SUMMARY OF POSITION
You will prepare menu items in accordance with company policies, procedures, programs, and performance standards. This role includes responsibilities for maintaining food costs and ensuring a clean kitchen environment at all times. All duties should be performed with the objective of maximizing guest satisfaction and enhancing the quality of the work environment, as directed by the Kitchen Manager or Manager on Duty.
POSITION ACTIVITIES AND TASKS
- Prepare cooking items as specified.
- Arrive at work well-groomed, in a clean and proper uniform, and consistently practice good personal hygiene.
- Utilize, maintain, and clean all kitchen equipment, as well as preparation and storage areas.
- Stock and rotate products on the line to ensure they meet shelf life standards.
- Demonstrate sufficient knowledge of recipes, menu items, and preparation procedures to guarantee accurate portioning, quality, cooking times, and adherence to performance standards.
- Prepare items according to guest requests while maintaining compliance with food safety and sanitation procedures.
- Effectively control food costs, ensuring accurate portioning and preparation as specified by recipes.
- Adhere to FIFO (first in, first out) standards during food preparation.
- Maintain cleanliness in the kitchen, prep areas, coolers, and storage areas.
- Follow appropriate safety procedures and policies concerning food handling, rotation, and storage.
- Conduct line sweeps throughout your shift.
- Implement a "clean as you go" policy during your shift.
- Understand OSHA requirements and health department standards.
- Clean all kitchen equipment and areas as directed by the Kitchen Manager or Manager on Duty.
- Anticipate, identify, and resolve system breakdowns to achieve maximum guest satisfaction.
- Communicate effectively with the Manager on Duty and colleagues regarding any product/service deficiencies, equipment issues, or safety concerns.
- Keep the General Manager and Manager on Duty informed of problems or issues and offer alternative solutions for consideration.
- Assist team members by preparing items according to recipes and procedures.
- Support the dishwasher by washing and restocking dishes, pots, pans, and utensils.
- Aid front-of-house staff in maintaining the cleanliness of the dining area.
- Deliver excellent guest service through active communication and cooperation with front-of-house staff.
PHYSICAL REQUIREMENTS/ENVIRONMENT/WORKING CONDITIONS
- Capable of extensive standing and walking for up to 8 hours.
- Must possess the ability to see at a distance of 20 feet and at close range of 12 inches, distinguishing between shapes and utilizing peripheral vision to navigate hazards.
- Effective verbal communication skills are essential.
- Exposure to heat, steam, smoke, and cold may occur.
- Requires reaching heights of approximately 6 feet and depths of 2.5 to 3 feet.
- High mobility and flexibility are required within the provided workspace.
- Strong time management skills are necessary.
- Must be able to read, write, and perform basic addition/subtraction calculations.
- Effective finger dexterity for writing, slicing, chopping, and operating equipment is required.
- Ability to fit through openings of 30 inches in width is necessary.
- Must be able to work irregular hours under high-pressure conditions, especially during busy periods.
