SUMMARY OF POSITION
The Line Cook is responsible for preparing menu items in accordance with company policies, procedures, and performance standards. This role plays a vital part in managing food costs and ensuring the kitchen remains clean and organized at all times. The Line Cook will execute all tasks to enhance guest satisfaction and maintain a high-quality work environment as directed by the Kitchen Manager or Manager on Duty.

POSITION ACTIVITIES AND TASKS

  • Prepare cooking items efficiently and accurately
  • Report to work well-groomed, in a clean and proper uniform, consistently practicing good personal hygiene
  • Utilize, maintain, and clean all kitchen equipment, including preparation and storage areas
  • Stock and rotate products on the line to ensure compliance with shelf life standards
  • Possess sufficient knowledge of recipes, menu items, and preparation procedures to ensure correct portioning, quality, cooking time, and adherence to performance standards
  • Prepare items according to guest requests while adhering to company standards and following food safety and sanitation procedures
  • Control food costs
  • Ensure accurate portioning of products and that food items are prepared as specified by recipes
  • Apply FIFO (first in, first out) standards when preparing items
  • Maintain cleanliness
  • Ensure the kitchen, prep areas, coolers, and storage areas are kept clean
  • Follow proper safety procedures and policies concerning food handling, rotation, and storage
  • Conduct line sweeps throughout the shift
  • Practice a “clean as you go” method throughout the shift
  • Understand OSHA requirements and health department standards
  • Clean all equipment on the line and other areas as directed by the Kitchen Manager or Manager on Duty
  • Anticipate, identify, and correct system breakdowns to enhance guest satisfaction
  • Communicate with the Manager on Duty and coworkers regarding product/service deficiencies and safety concerns
  • Keep the General Manager and Manager on Duty informed of any problems/issues, proposing alternative solutions for consideration
  • Assist team members
  • Prepare items according to recipes and procedures
  • Support the dishwasher by washing and restocking dishes, pots, pans, and utensils
  • Assist front-of-house staff with maintaining cleanliness in the dining area
  • Provide guest service through effective communication and cooperation with front-of-house staff

PHYSICAL REQUIREMENTS/ENVIRONMENT/WORKING CONDITIONS

  • Extensive standing and walking for up to 8 hours
  • Ability to see at a distance (20 feet) and close range (12 inches), distinguish between shapes, and utilize peripheral vision to avoid hazards
