Job description:

Nino Salvaggio is seeking a skilled Sous Chef for our Troy location.

Responsibilities:

  • Supervise and manage all departmental functions and activities to ensure the production of high-quality products while achieving established sales, gross profit, customer service, and labor targets.
  • Develop and implement strategies to optimize sales, gross profits, and overall departmental performance.
  • Coordinate workflows within the department, overseeing production, merchandising, sales, and distribution of products.
  • Comply with all health, labor, OSHA, and EEOC regulations to maintain a safe, healthy, and inclusive work environment.
  • Interview, hire, train, and effectively develop deli associates in accordance with company policies and all relevant regulations.
  • Possess comprehensive knowledge of all products offered in the department, including the ability to distinguish between varieties and types based on price, taste, preparation, and usage, while adhering to quality standards.
  • Prepare and cook all gourmet to-go products in line with company recipes and guidelines.
  • Collaborate with the Department Manager, General Manager, and the Director of Operations to determine production volume based on orders and sales projections.
  • Strategically plan product distribution and work with suppliers to ensure procurement and delivery of necessary products for optimal departmental operations.
  • Follow established procedures for dating, pricing, and restocking to ensure product quality, public image, accuracy, and effective product rotation.
  • Verify all received merchandise against vendor invoices to confirm adherence to quality standards.
  • Manage ordering and inventory control to enhance product freshness, quality, and turnover, thereby optimizing sales and return on investment.
  • Foster effective communication within the department and across the organization.
  • Mentor and develop associates through training, supervision, delegation, and appropriate recognition and corrective measures.
  • Ensure compliance with all Nino Salvaggio International Marketplace safety and food service sanitation standards.
  • Maintain an inviting and visually appealing department to create a positive customer experience.
  • Provide constructive feedback to the Department Manager, General Manager, and Director of Culinary Operations.
  • Supervise the Gourmet to Go staff and coordinate appropriate demonstrations.
  • Oversee various operational aspects of the department, including training, ordering, attendance, employee purchase policies, and disciplinary actions.
  • Assist the Catering Concierge Manager with the implementation and coordination of the Party Planning Guide and Catering program.
  • Motivate associates to meet company sales and customer service objectives.
  • Lead by example in all aspects of the role.
  • Perform other duties as assigned.

Qualifications:

  • A minimum of one year of management experience is required.
  • Reliable transportation is essential.
  • Exceptional communication skills are necessary.
  • A Food Service Management Certification is required.
  • A high school diploma or G.E.D. is mandatory.
  • At least one year of relevant experience or demonstrated ability is required.
  • A culinary degree or a combination of education and relevant experience is preferred.
  • Proficient in composing reports, business correspondence, and procedural manuals, including departmental memos and customer communication.
  • Ability to stand or walk for extended periods (8 hours or more) is required.
  • Must be able to regularly lift and/or move up to 30 pounds.
  • Dexterity in using hands for handling and feeling is required.
