Purpose of this Position:
The Sous Chef plays a crucial role in the daily operations of the kitchen and must be adept at performing various kitchen duties as required. This position often serves as the bridge between the culinary staff and resident services; thus, strong leadership and communication skills are essential. The Sous Chef collaborates closely with the Chef and other culinary team members in meal preparation, ensuring high-quality service in compliance with established menus, policies, and guidelines regarding safe food handling. The role necessitates maintaining a clean kitchen environment and a commitment to high food safety standards, while also providing effective leadership to the culinary staff during shifts. This position typically requires working evenings, weekends, and holidays.

Qualifications:
Candidates should possess relevant experience and training in professional cooking, along with applicable certifications. The ability to acquire and maintain a Food Protection Manager Certification in food service safety and sanitation (such as ServSafe) and HACCP certification is required. A solid understanding of geriatric dietary needs and preferences is essential. Excellent culinary skills, strong mathematical abilities for adjusting ingredient measurements, and outstanding time management and organizational capabilities are necessary to ensure timely meal preparation. The ideal candidate should be knowledgeable about safe food storage and handling practices to prevent contamination and spoilage, as well as possess the leadership and motivational skills required to inspire and get the best performance from the team.

Candidates must be at least 18 years of age and able to pass state-mandated criminal background checks and random drug testing.

Essential Functions:

  • Serve as the second-in-command in the kitchen, assuming leadership in the absence of the Chef.
  • Prepare all foods and beverages for meals, adhering to menu guidelines, policies, and regulations, ensuring timely service at appropriate temperatures.
  • Offer meal substitutions when residents decline scheduled menu items, as directed by the Chef, and accurately document food temperatures and other necessary information.
  • Guarantee that food is served attractively and at the correct temperatures while monitoring returned plates and communicating feedback to the Chef regarding food acceptance.
  • Ensure resident satisfaction by considering individual preferences and dietary restrictions, facilitating alternate options as necessary.
  • Collaborate with the Resident Services Coordinator to assure compliance with dietary orders and monitor residents’ nutritional statuses.
  • Maintain vigilance regarding the consumption of food by residents and initiate communication with appropriate staff about any nutritional challenges faced by residents.
  • Supervise and assist culinary staff in producing all menu items, prioritizing quality ingredients and proper plating techniques; supervise utility workers and server/prep assistants effectively.
  • Monitor inventory and assist with food and supply orders to uphold budget compliance.
  • Uphold regulatory standards in accordance with HFA rules, HPM policies, and SERVSAFE cleanliness and documentation guidelines.
  • Perform additional tasks as needed to meet the goals and objectives of the assisted living center.

Physical & Mental Requirements:

  • Ability to lift up to 50 lbs.
  • Capability to stand, bend, twist, turn, stoop, squat, sit, kneel, pull, push, and walk over long distances on hard surfaces for extended periods.
  • Tolerance for repetitive physical tasks and exposure to varying temperatures and strong odors.
  • Proficient in handling kitchen equipment, utensils, and engaging in communication via telephone and computer (including email).
  • Strong verbal and written communication skills with the ability to comprehend instructions in English.
